
Samsun's Geographically Indicated Pide
Bafra Pide is a traditional baked flatbread originating from the Bafra district of Samsun, distinguished by its long, narrow shape. Following an application by the Bafra Chamber of Commerce and Industry, it was registered as a protected geographical indication (designation of source) with the Turkish Patent and Trademark Office on 18 November 2009, under registration number 119.
Appearance and Flavour
What sets Bafra Pide apart is its thin dough shaped into a long, boat-like form. The filling typically consists of roasted minced meat, finely chopped onion, black pepper and hot pepper, spread in a thin layer over the dough before it is baked quickly in a stone oven. The edges rise slightly while the centre develops a crisp, golden-brown crust.

Bakeries in central Bafra prepare it fresh from early morning, and locals enjoy it both as a breakfast item and as a light lunch. For the people of the district it is more than a dish — it is a piece of culinary heritage tied to local identity, and orders are frequently placed for delivery outside the district as well. Bafra Pide is widely regarded as one of the most recognisable baked specialities of Samsun's cuisine.
