Samsun Simit is one of the most widely consumed baked goods in the province, registered as a protected geographical indication by the Turkish Patent and Trademark Office under registration number 176, following an application by the Samsun Chamber of Commerce and Industry. While sesame rings are baked across many Turkish cities, Samsun Simit holds its own separate registration thanks to its distinctive preparation method.

What Makes It Distinctive

The defining feature of Samsun Simit is that the dough rings are boiled in molasses water before baking, then generously coated in sesame seeds and baked in a stone oven. The molasses can come from grapes, mulberries, apples or pears; this boiling step gives the simit its characteristic colour and a subtle sweetness, while the thick sesame coating creates a crisp crust.
